I would suggest to search for patterns online, practise with fabrics before working on the actual material of faux fur.

I use this pattern a lot for those kinds of hats!

One pattern option has pockets in the paws, and the ear style is changeable. I would suggest some interfacing inside the ears to hold them up a bit better, if you can. Ironing it to the fleece or something :)
It's easy to follow as long as you know basic sewing terms :)
