Metal... Absolutely metal...

Being a guy who understands a thing or two about technology, absolutely everything in our modern technology relies on metal, and there would be soo much awesome stuff that you could do if you could simply controll it as an element. You could make vehicles, weapons, machinery, computers, and almost anything that your heart desires!

Oh, and don't tell me that metal isn't an element, it makes up more than half of the elementary table... :P
