What!? Nobody said Zelda? Storm in the Desert (a Song of Storms remix) is awesome.
Metal Gear Solid's main theme (and its variants), Sonic (Green Hill Zone, Starlight Zone, Open Your Heart remix, Live and Learn, etc), the Mario series, Metroid, Final Fantasy, Megaman 3, etc.
The list goes on and on...

Alot of the driving games have awesome sound tracks, gran tourismo 4 had james brown, even the bluesky cover of Born to slow

Im not to particularly crazy about most of the Burnout Paradise sound track but its not bad either. Hard to pay attention to it anyways flying around the city.

Smash Bros Brawl has a good ochestral sound track as do a lot of nintendo games.

Oblivion and Morrowind have great Themes
