I'm no expert, but I'd start out with a basic human shape. Then just build up the legs, add a tail, some little scroofs here and there to give the effect of fur, and smack an animal head on. :P
I had a human reference, drew that with light pencil, then took parts of the animal I wanted to draw and tried to recreate that onto the human body. Then darkened the outline and added some details, like teeth, horns, feathers etc. There's really good tutorials on youtube and online in general :)
