Parry - Repose - Charged R2 two handed before dodge-roll spamming and chugging estus as needed and repeating.

One way is I'd get my two favorite guns, El Diablo and Little Doctor and shoot'em then with my Springfield I spin around a few times then striking the groung with the butt of the rifle causing the boss to explode...twice.
